Game Day Dip!

Game day is fast approaching, people. I honestly don’t know what I’m more psyched for: the game, or the food. Okay, probably the game. But it helps to have some great snacks to nom on as well. The easier and quicker the better, so I’m not still in the kitchen at halftime. Not that I’d mind missing the halftime show, if you know what I mean…

Anyway, isn’t it really great when you can use one recipe to make multiple things? Buffalo cauliflower is one such recipe. Not only is it fabulous on its own, it also goes awesome in dip.

Now you might find yourself thinking, “Where did you get that idea?” Once upon a time, I liked buffalo chicken dip. Then I went vegan, so now I don’t. But I still like tasty stuff, right? And sure, they have vegan chik’n substitutes, but cauliflower is… you know what I’m thinking… a vegetable! Not to mention, buffalo cauliflower is awesome-tastic. All I really did was take it a step further: buffalo cauliflower gets chopped up and put into a dip. Now that’s the kind of thing that really makes you smile.

Anyway, you should probably try this dip. Okay, maybe a little more than probably. You should definitely try this dip. Hey, if you’re into tangy stuff, and if you like a little zip, I’m sure you’ll like this recipe. Enjoy!

Avocado-Buffalo Cauliflower Dip

Makes about four cups

2 medium ripe avocadoes

¼ cup vegan mayonnaise

½ cup vegan cream cheese

1 tbsp lemon juice

½ cup of your favorite hot sauce

2 cups buffalo cauliflower, chopped

1 cup vegan cheddar cheese, shredded

To serve: veggie strips/tortilla chips

Preheat oven to 350 F. Place all ingredients except for the buffalo cauliflower and vegan cheddar in a food processor and process until smooth.

Pour mixture into casserole dish and stir in cauliflower and vegan cheddar. Bake for 15-20 minutes, until warm. Serve with veggie strips and tortilla chips.

Easy, right? But you probably can’t sustain a hungry crowd on just dip. Here’s a mini roundup of some awesome vegan game day recipes:
