Blueberry Fest, Part Five: Island In A Glass

I don’t know about you, but summer is my absolute favorite time to experiment with new drinks and smoothies. There’s really nothing like sitting poolside with a nice, refreshing drink. And with all the different combinations you could try, the possibilities are nearly endless!

I mean, there’s you’re basic mixed berry (strawberries, blueberries, raspberries and orange juice). Or, if you want something grab-and-go, you could do a kale and chocolate deal. If you have a veggie hankering, a Green Warrior will fix you right up. If decadence is what you crave, a Lemon-Cheesecake smoothie is just the thing.

There’s pretty much a smoothie any mood you might be in. Smoothies are great like that. 🙂

For another example, what if you’re really beat, and you just need to relax a little? You want to unwind, but a beach vacation seems a little extravagant.

That’s where the Island In A Glass comes in. It includes lots of tangy, fresh flavors: creamy coconut, pineapple, a hint of lime, a banana for good measure, and especially blueberries. I think all these flavors compliment each other beautifully. And by the time I’m done drinking it, my worries are pretty much settled.

So, go for it! I don’t think you’ll be sorry.

Island In A Glass

Serves 2

1 cup coconut milk (the canned kind)

1 small banana, frozen

1 ½ cups frozen blueberries

½ cup pineapple

Juice from 1 lime

1 tbsp agave nectar

Lime slices, if desired (for garnish)

Put everything in a blender and blend until smooth. Pour into glasses and garnish with lime slices if using. Enjoy!

And with that, Blueberry Fest is officially over! I hope you enjoyed it 🙂
