Avocados rock. Why? Because not only are they good for you, they also have a creaminess to them that’s 100% vegan. Oh, and they’re also a fruit which, considering my mission, makes me even happier 🙂

I know, I said pudding. It sounds a little out there, but it’s true.
If you like avocados, you probably won’t be able to make this just once. But even if you don’t like avocados, I bet this recipe will knock your socks clean off your feet.
Just think, you can have your pudding and eat it too. Of course, I like to think of vegan chocolate chips as a special treat, not to be had every single day. And avocados are super healthy, but in moderation. Everything in moderation, I say.
Avocados have good fats, and they have nutrients as well. Point being: Pudding can be healthy. It can be useful to your body.
The proof is in the pudding. Ha. Ahahaha.
Erm, the proof is in the recipe. And the recipe is below:
SuperChocolate Avocado Pudding
1/3 cup almond milk
3 small or medium ripe avocados
1 cup vegan chocolate chips
1 tsp vanilla extract
3-4 tbsp agave nectar (depending on your sweetness preference)
In a food processor, puree avocados with almond milk until smooth. Melt vegan chocolate chips and put in food processor with the avocado mixture, along with the vanilla and agave. Blend until fully incorporated, scraping down the sides if necessary.
Place in refrigerator for about 1 hour, until completely chilled (it may thicken just a bit). Serve with strawberries, if desired.
